  • 18 pounds, 4½ to 5 hours
  • 20 pounds, 5 to 6 hours

Reduce the roasting time by 20 to 40 minutes if the bird isn’t stuffed. Plus, keep in mind that it will take longer to cook your bird if the oven is crowded with side dishes or other items.
